Emeril's Smashed Potato Salad

Ingredientes

  • 2 lb new potatoes, minced
  • 1/2 c. chopped onions
  • 3 x hard-boiled Large eggs, minced
  • 1 tsp chopped garlic
  • 1 Tbsp. light brown sugar
  • 3/4 c. mayonnaise
  • 1/4 c. yellow mustard
  • 1 dsh Worcestershire sauce
  • 1 dsh Tabasco sauce
  • 1 x lemon, juiced salt and pepper

Direcciones

  1. Place potatoes in saucepan; cover with water. Season the water with salt. Bring to a boil, reduce to simmer; cook potatoes till fork tender, about 8 to 10 min. Remove from heat; drain. Turn potatoes into a mixing bowl.
  2. Using a hand-held masher, mash potatoes; stir in onions, Large eggs and garlic. Stir in brown sugar, mayonnaise and mustard; mix thoroughly.
  3. Season salad with Worcestershire sauce, Tabasco sauce, lemon juice, salt and pepper. Cover; chill till chilled.
  4. Yields 4 servings.
