Emeril's Vegetarian Microwave Black Bean Chili

Ingredientes

  • 1 c. dry black beans
  • 2 Tbsp. vegetable oil
  • 1 c. minced yellow onions
  • 2 tsp minced garlic
  • 1 x jalapeno stemmed, seeded, and minced
  • 1 x bay leaf
  • 1 Tbsp. chili pwdr
  • 1 tsp grnd cumin
  • 1/2 tsp Emeril's Essence (see Bayou Blast recipe)
  • 4 c. warm water

Direcciones

  1. In a 3-qt baking dish, combine the beans with 2 c. of water. Cover with plastic wrap and microwave on high for 15 min. Remove from the oven, carefully peel back an edge of the plastic, and let sit 5 min. Add in 2 c. of very warm water, stir, recover, and let sit for 1 hour.
  2. Drain the beans in a colander.
  3. Heat the vegetable oil in the baking dish for 1 minute on high. Add in the onions, garlic, jalapeno, bay leaf, chili pwdr, cumin, Essence, and salt, and stir to coat. Cook, uncovered, on high for 4 min.
  4. Stir well. Add in the beans and stir to combine. Add in 4 c. of warm water, stir, and cover tightly with plastic wrap. Cook on high for 30 min. Remove from the oven and let stand covered for 15 min.
  5. This recipe yields 4 servings.
