Ingredientes

  • 1 1/2 lb Veal round steak, thinly sliced into small strips Salt to taste Pepper to taste Flour
  • 1 Tbsp. Butter
  • 1 Tbsp. Oil
  • 1 Tbsp. Finely minced shallots
  • 4 ounce Dry white wine
  • 2/3 lb Fresh mushrooms, sliced
  • 10 ounce Whipping cream
  • 3/8 c. Basic brown sauce (see recipe for "marchand de vin sauce")
  • 1 x Clove (small) garlic, finely chopped
  • 1 x -(up to)
  • 2 tsp Lemon juice
  • 2 Tbsp. Minced parsley

Direcciones

  1. Season veal with salt and pepper. Sprinkle with flour and saute/fry quickly in warm butter-oil combination till very slightly colored. Remove from pan.
  2. Add in shallots to pan and deglaze with the white wine. When wine reaches boiling, add in mushrooms and cook for several min to reduce wine. Add in whipping cream and brown sauce and continue reducing. Add in garlic, lemon juice, parsley and veal to mushroom sauce. To serve, garaish with sprigs of parsley.
  3. Yield: 4 servings.
