Receta Empanadas (Mexican Beef Pasties)

- Preheat oven to moderate (180'C). Lightly grease your baking trays.
- Heat oil in large saucepan, add in cumin and saute/fry till fragrant (don't burn). Add in onion and saute/fry till soft and clear. Add in grnd beef and cook till no longer pink. Add in minced capsicum, salt, pepper and chili (if desired it warm) and then your tin of tomatoes.
- Simmer till flavours are blended and meat is thoroughly cooked. Allow to cold to a temperature which won't 'heat' your frzn pastry or possibly burn your fingers!
- Cut your frzn pastry sheets into 4 smaller squares. Place a spoonful of meat mix into the corner and fold pastry over to enclose in a triangle shape (this is the shape best for me, however feel free to cut your pastry into circles etc). Place the triangles on greased trays and place in oven for approx. 20 min or possibly till pastry is puffed and golden brown.
