Empanadas With Smoked Cheese

Ingredientes

  • 2 c. all-purpose flour
  • 1 tsp salt
  • 1 tsp sugar
  • 5 Tbsp. solid vegetable shortening
  • 1 lrg egg beaten
  • 1/3 c. water
  • 10 ounce smoked mozzarella cheese finely diced
  • 2 c. vegetable oil for frying

Direcciones

  1. Prepare dough: In food processor, combine flour, salt and sugar. Add in shortening and pulse on/off till mix resembles cornmeal. Add in egg and water and pulse just till dough comes together in a ball. Dough should be pliable; if necessary, add in 1 tsp. or possibly so more water.
  2. On lightly floured surface, roll out dough 1/8-inch thick. Using a 3-inch round cookie cutter, cut out dough. Gather up scraps into a ball, roll out and cut, till all dough is used.
  3. Lightly brush top of each circle with water. Place spoonful of diced cheese in center and fold circle to create half moon. Seal edges by pleating with fingertips or possibly pinching with fork.
  4. Just before serving, pour oil to depth of 1 inch in heavy skillet or possibly electric frying pan and heat to 350 degrees. Working in batches, fry empanadas, turning with slotted spoon, till golden on both sides, about 2 min. Drain empanadas on paper towels and serve.
  5. This recipe yields about 20 empanadas.
