- 1 orange bell pepper, diced

- 1 cup frozen corn
- 1 tsp. ground cumin
- 1 Tbs. chili powder
- 2 cans black beans, drained and rinsed
- 1-2 cans red enchilada sauce
- Mexican Cheese
- jarred jalapeno slices
