%20are%20really%20simple%20with%20minimum%20of%20ingredients%20or%20masalas.%3C/p%3E%3Cp%3EAs%20are%20the%20vegetarian%20ones%20...%20which%20I%20believe%20are%20even%20more%20lighter.%3C/p%3E%3Cp%3EStill,%20that%20set%20me%20thinking.%3C/p%3E%3Cp%3EOf%20late,%20I%20have%20been%20posting%20less%20vegetarian%20dishes.%3C/p%3E%3Cp%3EWhy?%3C/p%3E%3Cp%3EI%20don't%20know.%20As%20simple%20as%20that.%3C/p%3E%3Cp%3ESo%20when%20I%20saw%20these%20pictures%20of%20the%20Jackfruit%20/%20Kathal%20ki%20sabzi%20in%20my%20folders,%20waiting%20for%20god%20knows%20how%20long%20to%20see%20the%20light%20of%20the%20day,%20I%20decided%20to%20make%20a%20post%20on%20it%20pronto.%3C/p%3E%3Cp%3EAnd%20promptly%20got%20stuck%20when%20it%20came%20to%20writing%20the%20recipe.%3C/p%3E%3Cp%3EI%20hunted%20amongst%20all%20my%20folders%20but%20could%20not%20find%20the%20recipe.%3C/p%3E%3Cp%3EI%20was%20sure%20I%20had%20written%20it%20somewhere.%20But%20still%20could%20not%20find%20it.%3C/p%3E%3Cp%3EChecked%20my%20scribble%20pad%20in%20the%20kitchen.%20Nope.%20No%20recipe.%3C/p%3E%3Cp%3EThe%20reason%20I%20was%20hunting%20for%20the%20recipe%20is%20that%20I%20hardly%20follow%20any%20measurements%20or%20one%20single%20recipe%20when%20I%20am%20cooking%20something.%3C/p%3E%3Cp%3EEvery%20time%20I%20use%20different%20things,%20with%20different%20measurements.%3C/p%3E%3Cp%3EI%20cannot%20call%20them%20measurements%20too%20...%20I%20just%20eyeball%20everything%20and%20throw%20in%20a%20pinch%20of%20this%20and%20a%20spoonful%20of%20that.%3C/p%3E%3Cp%3EYes,%20that%20is%20the%20way%20I%20cook.%20Most%20of%20the%20time.%3C/p%3E%3Cp%3EWhich%20makes%20it%20absolutely%20necessary%20to%20write%20down%20a%20recipe%20the%20same%20time%20I%20am%20making%20it.%3C/p%3E%3Cp%3EElse,%20within%20a%20day%20I%20forget%20it.%3C/p%3E%3Cp%3EAnd%20when%20I%20eventually%20sit%20down%20to%20make%20a%20post,%20I%20am%20completely%20lost.%3C/p%3E%3Cp%3EJust%20like%20today.%3C/p%3E%3Cp%3EI%20actually%20have%20some%20ingredients%20written%20down%20for%20a%20masala%20and%20marked%20it%20as%20%22for%20god%20knows%20what!%22.%3C/p%3E%3Cp%3EGet%20the%20picture?%3C/p%3E%3Cp%3EI%20could%20not%20remember%20if%20I%20had%20used%20onions%20or%20garlic.%3C/p%3E%3Cp%3EOr%20tomatoes.%3C/p%3E%3Cp%3EOr%20what%20masalas.%3C/p%3E%3Cp%3EFeeling%20lost,%20I%20gave%20up.%20And%20went%20to%20make%20myself%20a%20cup%20of%20tea.%3C/p%3E%3Cp%3EEvening%20was%20setting%20in%20and%20the%20sky%20had%20turned%20into%20a%20riot%20of%20colours.%20After%20a%20whole%20day%20of%20dark%20clouds%20hovering%20and%20a%20slightly%20muggy%20weather,%20the%20sun%20had%20burst%20through%20with%20a%20wonderfully,%20surreal%20golden%20light%20that%20slowly%20turned%20a%20purplish%20pink%20before%20letting%20the%20dark%20grey%20take%20over.%3C/p%3E%3Cp%3EAnd%20there%20was%20a%20beautifully%20cool%20breeze%20too.%3C/p%3E%3Cp%3EI%20sat%20with%20my%20cup%20in%20my%20hands%20and%20wondered%20about%20the%20recipe.%20Where%20was%20it?%3C/p%3E%3Cp%3EAnd%20then%20it%20struck%20me!%3C/p%3E%3Cp%3EIt%20was%20right%20there,%20in%20front%20of%20me,%20all%20the%20while.%3C/p%3E%3Cp%3EAnd%20I%20could%20not%20recognise%20it!%3C/p%3E%3Cp%3EThe%20thing%20is,%20I%20often%20write%20down%20a%20lot%20of%20reminders%20and%20other%20things%20on%20the%20white%20tiles%20on%20my%20kitchen%20wall.%3C/p%3E%3Cp%3EAnd%20the%20recipe%20was%20right%20there!%20In%20front%20of%20me!%3C/p%3E%3Cp%3EBut%20in%20jumbled%20words,%20small%20pieces%20and%20broken%20sentences.%3C/p%3E%3Cp%3ESlanted%20lines%20going%20all%20the%20way%20up%20on%20my%20right.%20Breaking%20at%20the%20joints%20of%20the%20tiles.%3C/p%3E%3Cp%3EUp%20and%20down%20and%20towards%20the%20corner.%3C/p%3E%3Cp%3EBut%20nowhere%20was%20it%20written%20what%20the%20recipe%20was%20for.%3C/p%3E%3Cp%3EFinally,%20it%20was%20one%20hurried%20line%20that%20saved%20me.%20%22Remember%20to%20apply%20plenty%20of%20oil%20in%20yours%20hands%20before%20cutting%20it%22.%3C/p%3E%3Cp%3EOnly,%20%20there%20was%20no%20mention%20of%20what%20'it'%20was!%3C/p%3E%3Cp%3ESigh!%3C/p%3E%3Cp%3ESo%20here%20goes%20the%20recipe.%3C/p%3E%3Cp%3ELight,%20summery.%20Perfect%20for%20lunch%20or%20dinner.%3C/p%3E%3Cp%3ENeed%20:%3C/p%3E%3Cp%3EHow%20to%20:%3C/p%3E%3Cp%3ECook%20the%20cut%20kathal%20pieces%20with%20some%20salt%20and%20water%20in%20a%20pressure%20cooker%20....%202%20whistles%20on%20low%20heat%20will%20do%20the%20job.%3C/p%3E%3Cp%3ERemove%20from%20heat%20and%20open%20cooker%20once%20it%20has%20completely%20cooled%20down.%3C/p%3E%3Cp%3EDrain%20the%20kathal%20pieces%20and%20keep%20aside.%3C/p%3E%3Cp%3EHeat%20oil%20in%20a%20kadahi%20/%20wok.%3C/p%3E%3Cp%3EAdd%20the%20bay%20leaf,%20green%20cardamom%20and%20the%20whole%20red%20chillies.%3C/p%3E%3Cp%3EAdd%20the%20onion%20slices%20quickly%20and%20fry%20till%20they%20turn%20pink.%3C/p%3E%3Cp%3EAdd%20the%20potatoes%20and%20fry%20covered%20till%20they%20are%20half%20cooked.%3C/p%3E%3Cp%3EAdd%20the%20tomato%20and%20keep%20frying%20on%20high%20heat.%3C/p%3E%3Cp%3ENow%20add%20the%20masala%20powders%20and%20salt,%20stirring%20all%20the%20while.%3C/p%3E%3Cp%3EAdd%20some%20water%20if%20needed.%3C/p%3E%3Cp%3EIt%20should%20not%20turn%20dry%20...%20the%20dry%20masalas%20will%20burn%20otherwise.%3C/p%3E%3Cp%3ENow%20add%20the%20kathal%20pieces%20and%20fry%20for%20a%20while.%3C/p%3E%3Cp%3EAdd%20enough%20water%20to%20cover%20the%20pieces.%3C/p%3E%3Cp%3EAdd%20salt%20and%20sugar.%3C/p%3E%3Cp%3ECover%20and%20let%20it%20cook%20till%20the%20potatoes%20are%20well%20done%20and%20the%20kathal%20/%20enchor%20has%20soaked%20up%20all%20the%20masalas%20well.%3C/p%3E%3Cp%3EDo%20check%20for%20water%20in%20between%20Add%20some%20if%20necessary.%3C/p%3E%3Cp%3EAfter%20the%20gravy%20has%20reached%20desired%20consistency,%20sprinkle%20the%20ghee%20and%20the%20garam%20masala%20powder%20and%20cover.%3C/p%3E%3Cp%3ELet%20it%20simmer%20for%20around%20five%20minutes.%3C/p%3E%3Cp%3ERemove%20from%20heat.%3C/p%3E%3Cp%3EServe%20hot.%3C/p%3E%3Cp%3EGoes%20great%20with%20rotis,%20parathas%20or%20dal%20and%20rice.%3C/p%3E%3Cp%3EEnjoy!!%3C/p%3E){kind=link}
