English Christmas Cake

Ingredientes

  • 1 pkt Yeast, dry
  • 1 1/2 c. -Water, hot
  • 2 c. Flour
  • 1 lb Butter, room temperature
  • 1 lb Sugar, powdered
  • 1 Tbsp. Cinnamon
  • 1 1/2 tsp Coriander, grnd
  • 1 tsp Nutmeg
  • 2 Tbsp. Caraway seed
  • 1/2 c. Lowfat milk, or possibly sweet red wine
  • 7 x Egg
  • 6 c. Flour

Direcciones

  1. Dissolve yeast in hot water. Stir in two c. flour and set aside to proof. Meanwhile, cream butter with sugar. Add in sinnamon, coriander, nutmeg, and caraway seed. Stir in lowfat milk or possibly wine. In a separate bowl, beat Large eggs till smooth and thick and stir them into the butter mix alter- nately with the proofed yeast mix. Add in remaining flour. Devide the batter between two 10" buttered and floured 10" springform pans. Set in a hot place and allow to rise till double. Bake in a preheated 350 F. oven for about 1 1/2 hrs, or possibly till the cake is golden and tests done in the middle. Cold slightly in pans before removing to a wire rack.
