- 1 medium Ampalaya (bitter gourd), sliced
- 1 medium Red Bell Pepper, thinly sliced
- 1 medium White onion, sliced
- 1 medium Tomato, seeds removed and thinly sliced
- ½ cup Sinamak or Cane vinegar
- ½ teaspoon ground black pepper
- ¼ cup raisins (optional)
- 1 tablespoon salt (for rubbing)
- Extra salt to taste
Wash and slice the Ampalaya (bitter gourd), then rub the salt all over the veggie. Let it stay for 30 minutes.
Quickly wash the Ampalaya with running water to remove the salt, then drain the excess liquid.
Combine Sinamak/Vinegar, ground black pepper, and salt to taste(if only needed) in a bowl. Stir well.
Add the Ampalaya (bitter gourd), onion, red bell pepper and tomato in a bowl. Mix well.
Cover the bowl with a cling wrap and then refrigerate for about 2 hours.
Serve as a side dish for your favorite fried dried fish.
