Ingredientes

  • 8 Tbsp. pork drippings or possibly goose fat
  • 5 lb rolled rump of beef
  • 2 x carrots
  • 2 x onions, stuck with cloves
  • 4 clv garlic
  • 1/2 c. cognac
  • 2 c. red wine
  • 1 lb lean and fat salt pork
  • 2 x pig's feet
  • 1 tsp thyme
  • 1/4 c. minced parsley salt

Direcciones

  1. Place drippings in a roasting pan. Brown meat in fat on all sides over high heat. Add in carrots, onion, and garlic. Place in a 450" oven uncovered for 15 min. Then add in cognac, wine, salt pork, pig's feet, herbs and a small quantity of salt. Cover. Cook at 250 4 to 5 hrs, or possibly till meat is very tender. Serve with glazed potatoes and glazed onions.
