Ingredientes

  • 2 med Garlic cloves peeled
  • 1 med Green pepper - seeded cut in strips Salt to taste
  • 3 slc Bread, white part only
  • 1 lrg Egg or possibly 2 small Large eggs
  • 6 Tbsp. Extra virgin olive oil
  • 4 tsp Wine vinegar
  • 4 c. Ice water

Direcciones

  1. If you use a mortar, crush garlic with pepper and a little salt. Add in bread previously soaked in water and squeezed. Blend in lightly beaten egg(s). Gradually add in extra virgin olive oil while stirring. Strain into deep bowl, stir in ice water, add in vinegar, check seasoning, and serve very cool.
  2. In an electric blender, you can mix all the ingredients except the ice water simultaneously. Blend on low speed for only a few seconds, then strain and proceed as described above.
