Exotic Bean And Brown Rice Chili

Ingredientes

  • 1 c. anasazi or possibly appaloosa beans Or possibly Jacob's cattle or possibly other exotic beans soaked overnight and liquid removed, (see note)
  • 6 c. water
  • 1/2 c. long-grain brown rice
  • 1 1/4 c. warm water
  • 1 Tbsp. canola oil
  • 1 med yellow onion, diced
  • 1 x green bell pepper, seeded and diced
  • 1 stalk celery, minced
  • 2 x cloves garlic, chopped (2 to 3)
  • 28 ounce canned crushed tomatoes
  • 2 tsp chili pwdr, up to 3
  • 2 tsp dry oregano
  • 1 tsp paprika
  • 1/2 tsp grnd black pepper
  • 1/2 tsp salt
  • 2 Tbsp. minced fresh parsley, up to 3 Bottled warm sauce, to taste

  1. MAKES 6 TO 8 SERVINGS. VEGAN
  2. Exotic beans, also called heirloom beans, retain their striking markings and streaks of color even after they are cooked. Brown rice adds a soothing texture to this hearty dish and a nutritional boost.
  3. In a large saucepan, combine beans and water. Bring to a simmer. Cook uncovered over medium-low heat, stirring occasionally till tender, hrs.
  4. Drain, reserving 1 c. cooking liquid.
  5. Meanwhile, combine rice and warm water in saucepan: bring to a boil. Cover: cook over low heat till liquid is absorbed (don't stir), 30 to 35 min.
  6. Remove from heat; fluff rice and let stand, covered, till beans are done.
  7. Heat oil in large saucepan. Add in onion, bell pepper, celery and garlic; saute/fry 5 to 7 min. Stir in beans and cooking liquid, cooked rice, crushed tomatoes and dry seasonings. Cook 20 min over low heat, stirring occasionally.
  8. Stir in parsley: let stand 8 to 10 min before serving.
  9. Ladle chili into bowls. Serve with hot cornbread or possibly whole wheat bread. and bottled warm pepper sauce if you like.
  10. Makes 6 to 8 servings.
  11. Note: Heirloom beans are available in many gourmet grocery stores, natural food stores and well-stocked supermarkets. As a rule, soak beans overnight in plenty of water; drain soaking liquid and simmer beans in fresh water till tender.
