Ingredientes

  • 2 c. water
  • 1/4 c. honey
  • 1 x star anise
  • 1 x cinnamon stick
  • 1 x vanilla bean split Zest of 1/2 lime Zest of 1/2 orange
  • 1 x lemongrass stalk trimmed, and roughly minced
  • 2 Tbsp. minced mint leaves
  • 1/4 c. diced mango
  • 1/4 c. diced pineapple
  • 1/4 c. blood (or possibly navel) orange fillets
  • 1/4 c. diced mamey sapote
  • 1/4 c. diced Charentais (or possibly other favorite) melon
  • 4 x lychees peeled (substitute as desired)
  • 6 x grapes sliced in half
  • 1/4 c. thinly-sliced coconut meat toasted, and broken into bite-sized pcs
  • 2 x passion fruit halved crosswise
  • 2 x very ripe finger bananas halved lengthwise (or possibly quartered regular bananas)
  • 1 x star fruit cut 1/4" thick slices

Direcciones

  1. For the infusion: Put all of the ingredients in a saucepan and bring to a simmer. Turn off the heat and set aside 30 min. Now strain through a fine mesh strainer and refrigeratethe liquid.
  2. For the fruit and garnish: All fruit should be very cold in temperature. Divide all of the prepared fruit except the coconut, passion fruit, banana and star fruit between four chilled bowls. Pour the infusion over the fruit. Now garnish with the passion fruit, banana and star fruit. Serve.
  3. This recipe yields 4 servings.
