%20for%20four%20weeks%20this%20summer.%20This%20is%20the%20same%20camp%20he%20has%20attended%20for%20the%20past%20five%20years%20only%20this%20year,%20instead%20of%20being%20just%20a%20camper,%20he%20is%20learning%20to%20work%20with%20children%20as%20young%20as%20seven%20years%20old%20and%20also%20earning%20his%20lifeguard,%20CPR%20and%20first%20aid%20certifications.%3C/p%3E%3Cp%3EIf%20all%20goes%20well,%20the%20camp%20will%20hire%20him%20next%20year%20as%20a%20junior%20counselor;%20a%20paid%20position.%20I%20have%20fully%20supported%20him%20in%20this%20quest%20and%20it%20seems%20very%20likely%20he%20will%20be%20hired%20on%20full%20time%20next%20summer.%20The%20other%20counselors%20and%20the%20camp%20director%20have%20all%20indicated%20that%20they%20like%20him,%20he%20is%20responsible%20and%20a%20great%20candidate.%3C/p%3E%3Cp%3EWhat%20I%20didn't%20fully%20realize%20until%20yesterday%20when%20I%20took%20him%20back%20from%20his%20weekend%20'laundry'%20break%20is%20that%20next%20year,%20full%20time%20means%20the%20ENTIRE%20summer.%20From%20the%20first%20weekend%20after%20school%20breaks%20until%20the%20last%20weekend%20before%20Labor%20Day.%3C/p%3E%3Cp%3EThis%20brings%20me%20to%20the%20sudden%20realization%20that%20our%20last%20'family%20vacation'%20was%20our%20last%20family%20vacation.%20I%20want%20that%20time%20back!%20With%20one%20grown%20child,%20two%20kidadults%20in%20college%20and%20our%20youngest%20in%20his%20last%20two%20years%20of%20high%20school%20everyone%20is%20running%20on%20their%20own%20schedules.%20This%20past%20Easter%20was%20the%20first%20time%20we%20went%20on%20a%20'family'%20ski%20trip%20minus%20one%20member.%20This%20year,%20we%20will%20be%20down%20two%20members%20and%20next%20summer?%20All%20three%20'not%20growns'%20will%20be%20doing%20their%20own%20thing...%20I%20am%20used%20to%20the%20married%20one%20being%20out%20on%20his%20own,%20but%20this%20is%20getting%20out%20of%20hand.%20All%20of%20them?%20Leaving%20us?%3C/p%3E%3Cp%3EWe%20have%20been%20blessed%20with%20many%20wonderful,%20happy%20memories%20of%20travels%20as%20a%20family.%20Camping%20across%20this%20beautiful%20country%20together;%20rafting%20the%20Grand%20Canyon,%20riding%20on%20horseback%20into%20the%20Bob%20Marshall%20Wilderness%20in%20Montana,%20hiking%20Acadia%20in%20Maine%20and%20watching%20the%20sunrise%20at%20the%20first%20sunrise%20spot%20in%20the%20country,%20atop%20Mount%20Cadillac.%20Iceland%20-%20land%20of%20opposites,%20sailing%20among%20icebergs%20in%20a%20harbor,%20bathing%20in%20hot%20springs,%20hiking%20a%20glacier%20in%20the%20land%20of%20the%20midnight%20sun.%20South%20Carolina%20summers,%20digging%20in%20the%20sand,%20laughing%20as%20we%20all%20tried%20our%20hand%20at%20surfing,%20big%20family%20BBQs%20on%20decks%20overlooking%20the%20ocean%20-%20skiing%20out%20west%20and%20long%20lazy%20weekends%20sliding%20down%20slopes%20here%20in%20the%20north%20east.%20Fantastic%20memories%20all.%20Why%20didn't%20I%20know%20that%20each%20and%20every%20trip%20would%20be%20leading%20up%20to%20a%20last%20trip.%3C/p%3E%3Cp%3EI%20want%20my%20last%20family%20vacation%20back.%20Had%20I%20known%20it%20was%20the%20last%20time%20we%20would%20all%20be%20together%20I%20would%20have%20savored%20it.%20I%20would%20have%20watched%20them%20all%20more%20closely.%20Maybe%20stayed%20up%20later%20with%20them.%20Sang%20louder%20at%20the%20campfire.%20Been%20more%20patient%20about%20clothes%20and%20wet%20towels%20strewn%20everywhere.%20I%20would%20have%20held%20it%20all%20closer%20in%20my%20heart.%3C/p%3E%3Cp%3EWith%20each%20ending%20I%20know%20there%20is%20a%20beginning,%20I%20just%20have%20to%20find%20the%20new%20thread%20and%20start%20it.%3C/p%3E%3Cp%3EHmpf.%3C/p%3E%3Cp%3ETake%20duck%20breasts%20out%20of%20the%20refrigerator%20one%20hour%20before%20cooking.%20Score%20the%20skin%20on%20the%20diagonal,%20then%20score%20again,%20cutting%20across%20the%20first%20diagonal%20to%20form%20diamonds.%20Be%20careful%20to%20not%20cut%20into%20the%20meat,%20only%20down%20to%20it.%20This%20will%20aid%20in%20releasing%20the%20fat%20under%20the%20skin.%20Sprinkle%20with%20salt%20and%20pepper.%20Set%20aside.%3C/p%3E%3Cp%3EWash%20and%20spin%20greens.%20Plate%20with%20two%20cups%20salad%20on%20each%20plate.%20Add%20any%20other%20vegetables%20you%20like.%20I%20added%20matchstick%20carrots,%20baby%20heirloom%20tomatoes%20and%20sliced%20radishes.%20Set%20aside.%3C/p%3E%3Cp%3EPour%20water%20and%20sugar%20into%20high%20sided%20saucepan%20and%20bring%20to%20boil.%20When%20sugar%20is%20dissolved%20add%20currants%20and%20ginger.%20Continue%20to%20boil%20for%20about%205%20minutes%20or%20until%20mixture%20is%20syrupy%20and%20reduced%20by%20half.%20Place%20in%20a%20bowl%20with%20a%20small%20ladle.%3C/p%3E%3Cp%3ENow%20place%20a%20frying%20pan%20over%20medium%20high%20heat%20and%20add%20duck%20breasts%20skin%20side%20down.%20Turn%20flame%20down%20to%20medium%20and%20cook%20for%20about%204%20to%205%20minutes.%20Have%20a%20heat%20proof%20bowl%20ready.%20Pour%20off%20the%20fat%20as%20it%20renders%20out%20of%20the%20skin%20and%20continue%20to%20cook%20until%20skin%20is%20dark%20and%20crisp.%20Turn.%3C/p%3E%3Cp%3ECook%20for%20an%20additional%204%20to%205%20minutes.%20Meat%20should%20be%20a%20rosy%20pink;%20medium%20to%20ensure%20it%20is%20tender%20and%20moist.%3C/p%3E%3Cp%3EPlate%20duck%20breasts%20and%20let%20rest%20for%2010%20minutes.%20Tent%20to%20keep%20warm.%3C/p%3E%3Cp%3ESlice%20duck%20breasts%20on%20the%20diagonal%20and%20arrange%20slices%20on%20top%20of%20greens.%20Spoon%20currant%20sauce%20over%20meat%20and%20serve%20immediately.%3C/p%3E%3Cp%3ESavor%20the%20meal%20and%20every%20moment%20you%20get%20to%20spend%20with%20family%20and%20friends.%20Everything%20happens%20in%20a%20blink%20of%20an%20eye.%3C/p%3E%3Cp%3E*A%20Cook's%20Notes:%20I%20like%20Hudson%20Valley%20Cage%20Free%20Duck%20Breasts.%20And%20no,%20they%20didn't%20pay%20me%20or%20give%20me%20duck%20breasts%20to%20say%20that%20-%20they%20are%20just%20reliably%20flavorful%20and%20moist%20with%20an%20added%20plus%20of%20being%20humanely%20raised.%3C/p%3E){kind=link}
