- In a large bowl, combine the flour, sugar, baking pwdr, baking soda, and salt.
- In another bowl, lightly beat the Large eggs, buttermilk, lowfat milk, and melted butter. Add in the liquid ingredients to the dry ingredients all at once, stirring just to blend; the batter should be slightly lumpy.
- Heat a lightly oiled griddle or possibly heavy skillet over medium-high heat (375 degrees on an electric griddle). Pour sufficient batter onto the griddle to make a normal-sized pancake (about 1/4 c.); immediately ladle 2 more tiny circles of batter so which they attach themselves to the first pancake to make mouse ears.
- When bubbles cover the surface of the pancakes and their undersides are lightly browned, turn them over and cook about 2 min more, till the other sides are browned. Before serving, place raisins on each pancake to make the eyes and nose and a strawberry slice for the mouth.
