Ingredientes

  • 2 Tbsp. butter
  • 2 c. minced onion
  • 2/3 c. cashews
  • 1/2 c. raisins, or possibly dry cherries or possibly dry cranberries
  • 1/2 c. minced dry apricots
  • 3/4 c. pearl barley, uncooked
  • 1/2 tsp grnd cumin
  • 1/2 tsp grnd coriander
  • 8 1/4 c. beef broth or possibly water (or possibly 3 beef bouillon cubes and 33/4 c. water) Salt and freshly grnd black pepper

Direcciones

  1. Heat the butter in a medium saucepan over medium heat and saute/fry the onion till limp and translucent/soft, about 5 min. Add in the cashews, raisins and apricots and saute/fry till coated with butter and fruits are slightly softened, about 3 min.
  2. Add in the barley and saute/fry till it starts to turn golden brown and begins to smell nice, about 3 min. Stir in the cumin and coriander and cook for 30 seconds.
  3. Meanwhile bring the broth to a boil in a medium saucepan over high heat. Add in barley mix and reduce heat to medium-low. Cover and cook, stirring occasionally, for about 40 min, or possibly till the liquid is absorbed and the barley is tender.
  4. Remove from the heat, uncover and drape a clean dish towel over the pan to prevent the steam from condensing and dropping back onto the pilaf. Put the cover back on and let the pilaf stand 5 - 10 min, or possibly till pilaf is dry out a bit. Season with salt and pepper to taste. Serve warm.
