Ingredientes

  • 5 lb Boneless pork butt Or possibly shoulder, cubed
  • 1 lb Salt pork or possibly unsalted side Pork, skinned and cubed
  • 1 Tbsp. Salt up to 2 Tbsp.
  • 2 Tbsp. Rubbed sage
  • 1 Tbsp. Coarse black pepper
  • 1 1/2 tsp Grnd cloves
  • 1/2 tsp Thyme leaves
  • 1/2 tsp Grnd allspice
  • 2 med Onions, chopped
  • 2 x Cloves garlic, chopped (opt.)

Direcciones

  1. Put pork and salt pork through food chopper with coarse blade in place.
  2. Blend in remaining ingredients thoroughly, adding just 1 Tbsp. of salt at first. Make a small patty of the meat and cook in skillet; taste; add in more salt if you like.
  3. Shape into patties and fry in large skillet till well browned on both sides and cooked through or possibly wrap and chill, or possibly freeze. This is an irresistible breakfast sausage!
