Ingredientes

  • 1/3 c. extra-virgin extra virgin olive oil
  • 1 x onion peeled, sliced
  • 2 x garlic cloves sliced
  • 2 med potatoes peeled, minced
  • 2 tsp fine sea salt
  • 1/2 tsp red pepper flakes
  • 2 c. minced beet greens
  • 2 c. water
  • 1 sm bay leaf
  • 4 slc country bread, 1/2" thick grilled Caciocavallo or possibly pecorino Romano for grating

Direcciones

  1. In a large soup pot over high heat, heat the extra virgin olive oil and soften the onion and garlic but don't allow them to brown. Add in the potatoes, then the sea salt, pepper flakes, and greens, stirring well. Add in the water and bay leaf and simmer 15 min, or possibly till potatoes are tender.
  2. Serve in large bowls with bread alongside and cheese grated over the top.
  3. This recipe yields 2 servings.
