Receta Farro with Spring Onion and Walnuts
Dear Farro: I love you more than brown rice. Sorry brown rice, it’s not you, it’s me.
I tried farro for the first time today. I don’t know if you can tell, but I absolutely loved it. I beg you to try farro. Once you go farro, you’ll never go back. Don’t say anything. I know.
Farro with Spring Onion and Walnuts
I found farro at Sprouts Farmer’s Market store in Walnut Creek.

Serves: 4
Ingredients
- 1 cup pearlized farro (I used Nature’s Earthly Choice)
- 2 cups water
- 1 teaspoon salt
- ½ cup chopped spring onion greens and the bulb, sliced
- ½ cup walnuts, roughly chopped
- salt and pepper to taste
Directions
Prepare farro by boiling it in 2 cups of salted water. Reduce heat to medium and cook for about 20 minutes.
meanwhile, spay a pan with olive oil spray.
Saute the spring onion with salt and pepper.
Combine the cooked farro and the saute onion. Top with roughly chopped walnuts.

This onion had some incredible flavor. Yes, it was in my CSA basket. Pay no attention to the summer squash. They jumped right into the photo, those brats.
Chewy and nutty in flavor and texture. I don’t want to hurt your feelings brown rice, but I really do love farro more.
Try it, you’ll love it.
