Happy Easter! For some it's today, and for me it was yesterday. I had a 'Marvelous in My Monday' city adventure with my guy. The day first started out with us on a hunt for Easter Eggs....AKA us walking ourselves to the grocery to buy some. Last year I had a jelly-bean egg and he had a pirate egg. Well, this year literally no grocery store was open...anywhere! So we went with it, adventuring all around the city people watching, exploring new shops and side streets and ended up at a bar. Talk about the 21 year old version of Easter huh? It was awesome though, good to just be out of the house trying something new. (with my boo - could not help it I love rhyming)

WOW, okay then, awesome let's get started!

This recipe was adapted from a popular fitness lover & pancake creator:: Spoonful of Fit with her infamous fluffy coconut pancakes. I just had to dye them Easter mint green, must be the American in me...mint, hmmm seems I've been talking a lot about mint.....like here...I'm just so caught up with trends you know? It's hard being this...in tune.

Ingredients//

Directions//

Heat the pan to medium

Add all dry ingredients to bowl - coconut flour, baking powder, salt, & natural sweetener

Mix 3 egg whites, almond milk, & greek yogurt into the dry ingredients bowl

Spray non-stick pray to the medium heated pan

Pour batter into pan to make a nice circle

Flip when you see pancake bubbles surfacing to the top of the round pancake batter

Enjoy - I topped mine with PB2, cinnamon, & mixed berries, BOMB.COM.
