Receta Fatfree Carrot Muffins

- Preheat oven to 350 degrees. Spray muffin pan with nonstick spray.
- Combine flour, sugar, cinnamon, salt, baking soda, baking pwdr, and ginger.
- In a separate bowl combine carrots, yogurt, Large eggs, applesauce, raisins, brown sugar and vanilla.
- Combine both mixtures just till flour is moistened.
- Spoon into pans, and bake 30 mins. or possibly till they test done (dry in center).
- Sprinkle with powdered sugar if you like. (I did not)
- If you are not concerned about salt intake - I would use 1 whole tsp - but it tastes good with only 1/2 tsp..
