Receta Favorite Ham Salad Spread
I've written about this ham salad spread before on the heals of another recipe post, but it is so good, I thought it deserved it's very own post.
It's so easy to make and perfect for any leftover holiday ham. I like it best served on crackers as a lunch or as an appetizer, but you can also spread some between two slices of bread and make a sandwich out of it. I've even eaten it for breakfast on top of toast! lol It's a great tasty appetizer to bring along with you to a holiday party too!!
There is a deli not far from my house where they make the BEST ham salad spread EVER. I have to say, mine is pretty darn close to theirs!
I don't really measure anything out when I make this...it all depends on how much leftover ham I have. I like to buy spiral sliced ham on the bone for the holidays, so that is what I use. To prepare the ham salad, I cut off as much visible fat from the ham slices as I can and rough chop it. Then I add it to the food processor with the blade attachment and process it until the ham is a finely chopped. I remove the ham from the food processor to a large bowl. Next, I rough chop 1 or 2 stalks of celery, add that to the food processor and chop that finely, then add that to the ham. A bit of low fat mayo, some pickle relish (sweet or dill, your choice), and a bit of horseradish sauce added to the ham/celery mixture and combine well. You can also add a few dashes of hot sauce, if you like. I'm going to give measurements in the recipe...but just know it's more of a guideline than exacts. You can adjust as you like.
It's also going to be hard to provide nutrition information for this recipe...as it depends on your ham and the amounts you use for the mayo/horseradish sauce. *I have calculated out the amounts below though, using the products I use and trying to get measurements as close to what I used as possible. Again, please just use this as a guideline, as your recipe or ham you use may differ from mine.
Favorite Ham Salad Spread
* Servings - approx. 16 Serving size - approx. 1 TBS. Points Plus per Serving - 1 Point+
- Calories - 35, Total Fat - 2g, Carb. - 2.1g, Protein - 2.4g, Fiber - 0.1g
- Ingredients:
- approx. 8 oz. Honey Baked Spiral Sliced Ham, trimmed of any visible fat and roughly chopped
- 1 - 2 stalks celery, roughly chopped
- 3 TBS reduced fat mayo
- 1 tsp. horseradish sauce (or more to taste)
- 1 heaping TBS pickle relish (sweet or dill)
- a few dashes of hot sauce, if you like
Directions:
With the blade attachment fit into a large food processor, add the ham and process until finely chopped. Remove the ham to a large bowl. Add the celery to the food processor, and process until finely chopped. Add to the ham in the bowl. Add the rest of the ingredients to the bowl and stir with the ham and celery until well combined. Serve immediately or refrigerate until ready to serve. Excellent on crackers or as a spread for sandwiches.
Like I mentioned, please use the nutritional information as a guideline as there are many variables in this recipe that could change it. This is by no means a low calorie or diet friendly dish, but it is delicious and as long as you use portion control...it can be worked into your diet.
I honestly look forward to this spread every holiday. It's a wonderful way to use up some of your leftover ham and give it a whole new personality.
I think I'm at the end of my leftovers from last week. I hate to waste, so reinventing leftovers is a challenge I like to accept! I used up the last of the turkey in a vegetable soup I made on Sunday. I've got a bit of cranberry left...maybe some baking in my future?
