Ingredientes

  • 4 x Large eggs
  • 1 c. vegetable oil
  • 2 c. granulated sugar
  • 2 c. grated zucchini
  • 2 tsp vanilla
  • 3/4 c. honey
  • 3 c. all-purpose flour
  • 1 tsp salt
  • 1 tsp baking pwdr
  • 1 tsp baking soda
  • 1 Tbsp. grnd cinnamon
  • 1 c. minced nuts
  • 1/4 c. sweetened, shredded coconut

Direcciones

  1. Grease and flour two 9-by-5 inch loaf pans. Preheat oven to 325 degrees.
  2. Beat Large eggs till light and foamy. Add in oil, sugar, zucchini, vanilla and honey; mix well.
  3. Sift together the flour, salt, baking pwdr, baking soda and cinnamon. Add in to zucchini mix and mix well. Mix in nuts and coconut.
  4. Pour batter into prepared pans. Bake for 1 hour, or possibly till a toothpick inserted in center comes out clean. Invert on a wire rack to cold.
