%20reveal%20day.%20%20This%20month%20I%20was%20assigned%20to%20Cook%20Lisa%20Cook.%20%20I%20really%20admire%20Lisa's%20blog...especially%20the%20photos%20of%20her%20sweet%20five-year-old%20daughter,%20Maisie.%20%20Lisa%20and%20her%20husband,%20Eammon,%20adopted%20precious%20Maisie%20from%20China%20in%20December%20of%202006.%20%20You%20can%20tell%20she%20is%20quite%20the%20treasured%20princess%20in%20their%20lives;%20it's%20a%20beautiful%20thing%20to%20see.%20%20I%20really%20love%20that%20Lisa%20involves%20Maisie%20in%20much%20of%20her%20time%20spent%20in%20the%20kitchen,%20as%20Maisie%20is%20in%20a%20large%20majority%20of%20the%20preparation%20photos.%20%20Those%20times%20will%20be%20sweet%20memories%20for%20Maisie%20as%20she%20gets%20older.%3C/p%3E%3Cp%3ELisa%20has%20many%20delicious%20recipes%20on%20her%20blog.%20%20I%20will%20definitely%20be%20heading%20back%20to%20try%20her%20Chocolate%20Chip%20Gingersnap%20cookies%20and%20many%20other%20delightful%20creations.%20%20I%20was%20intrigued%20by%20her%20Rolo%20Brownie%20Bites%20with%20Caramel%20Cream%20Cheese%20Frosting.%20%20Because,%20yum!%20%20Chewy%20caramel%20chocolates%20buried%20within%20warm%20brownies%20and%20left%20to%20get%20soft%20and%20melty?%20%20Then%20topped%20with%20a%20caramel%20cream%20cheese%20frosting?%20%20Who%20can%20resist%20such%20a%20treasure?%3C/p%3E%3Cp%3EI%20changed%20the%20recipe%20only%20slightly%20by%20substituting%20Ferrero%20Rocher%20candies%20for%20the%20Rolos%20because%20I%20could%20not%20find%20a%20single%20Rolo%20candy%20in%20the%20grocery%20store%20on%20the%20day%20I%20was%20shopping%20to%20make%20this%20dessert.%20%20I%20also%20did%20not%20use%20the%20jarred%20caramel%20sauce...I%20made%20my%20own%20simply%20by%20cooking%20sweetened%20condensed%20milk%20in%20a%20saucepan%20for%20about%2010%20minutes.%3C/p%3E%3Cp%3ESo%20grab%20your%20favorite%20package%20of%20brownie%20mix%20(or%20make%20your%20own%20homemade%20batter),%20some%20cream%20cheese,%20butter,%20a%20small%20can%20of%20sweetened%20condensed%20milk,%20powdered%20sugar,%20and%20the%20candies%20(your%20choice...).%3C/p%3E%3Cp%3EGrease%20and%20then%20fill%20the%20mini-muffin%20tins%20with%20the%20brownie%20batter.%3C/p%3E%3Cp%3EBake%20for%2012-15%20minutes%20at%20325%20degrees%20until%20done.%3C/p%3E%3Cp%3EHave%20the%20candies%20unwrapped,%3C/p%3E%3Cp%3Eand%20immediately%20press%20them%20into%20the%20warm%20brownies.%3C/p%3E%3Cp%3EWhile%20the%20brownies%20are%20baking,%20you%20can%20make%20the%20caramel%20sauce%20(if%20you%20choose%20not%20to%20use%20the%20prepared%20store-bought%20version).*%3C/p%3E%3Cp%3ESimply%20cook%20a%20small%20can%20of%20sweetened%20condensed%20milk%20over%3C/p%3E%3Cp%3Emedium%20heat%20for%20about%2010%20minutes.%3C/p%3E%3Cp%3EStir%20almost%20constantly.%3C/p%3E%3Cp%3EIt%20will%20become%20thicker%20and%20darken%20in%20color.%3C/p%3E%3Cp%3EAnd%20before%20you%20know%20it,%20you'll%20have%20caramel.%3C/p%3E%3Cp%3EMix%20as%20many%20tablespoons%20of%20caramel%20into%20the%20icing%20as%20you'd%20like.%3C/p%3E%3Cp%3EI%20used%20two%20tablespoons,%20but%20next%20time%20I'll%20use%20more.%3C/p%3E%3Cp%3ENow%20back%20to%20the%20brownies.%3C/p%3E%3Cp%3E(I%20dotted%20mine%20with%20some%20of%20the%20extra%20caramel.)%3C/p%3E%3Cp%3EAnd%20then%20I%20iced%20them.%3C/p%3E%3Cp%3EA%20little%20cross-section%20view%20for%20you...%3C/p%3E%3Cp%3EFerrero%20Rocher%20Brownie%20Bites%20with%20Caramel%20Icing%3C/p%3E%3Cp%3EMakes%2024%20bite-sized%20brownies%3C/p%3E%3Cp%3ERemove%20all%20wrappers%20from%20the%20candies.%3C/p%3E%3Cp%3EPre-heat%20oven%20to%20325F.%3C/p%3E%3Cp%3EPrepare%20brownies%20according%20to%20package%20directions.%20%20Grease%20a%20mini-muffin%20tin%20with%20cooking%20spray%20and%20fill%20each%20cup%20approximately%203/4%20full%20with%20batter.%20%20Bake%20for%2012-15%20minutes%20until%20a%20toothpick%20inserted%20comes%20out%20clean.%20%20Remove%20from%20oven%20and%20immediately%20press%20a%20candy%20into%20the%20center%20of%20each%20brownie%20bite.%20%20(The%20top%20of%20the%20candy%20will%20protrude%20a%20bit%20from%20the%20brownie...it's%20OK...you'll%20cover%20it%20with%20icing.)%20%20Cool%20for%20a%20couple%20of%20minutes%20in%20the%20tin%20then%20carefully%20remove%20the%20brownie%20bites%20from%20the%20pan%20to%20a%20cooking%20rack.%20%20Allow%20to%20cool%20completely.%3C/p%3E%3Cp%3ETo%20make%20the%20frosting,%20use%20the%20paddle%20attachment%20on%20a%20stand%20mixer%20and%20beat%20the%20butter%20and%20cream%20cheese%20together%20until%20smooth.%20%20Add%20the%20caramel%20sauce*%20and%20blend.%20%20Add%20the%20confectioners%20sugar%20and%20whip%20until%20creamy%20and%20smooth.%20%20Using%20a%20pastry%20or%20plastic%20bag%20with%20a%20piping%20tip,%20pipe%20the%20frosting%20onto%20the%20top%20of%20each%20brownie%20bite.%20%20Chill%20in%20the%20refrigerator%20to%20set%20the%20frosting%20a%20bit%20before%20serving.%3C/p%3E%3Cp%3E*To%20make%20homemade%20caramel%20sauce,%20simple%20empty%20the%20contents%20of%20a%20small%20can%20of%20sweetened%20condensed%20milk%20into%20a%20saucepan.%20%20Stir%20constantly%20for%2010%20to%2012%20minutes%20over%20medium%20heat.%20%20(Do%20not%20let%20it%20scorch.)%20%20The%20milk%20will%20begin%20to%20deepen%20in%20color%20and%20thicken.%20%20Remove%20from%20heat%20when%20the%20caramel%20will%20thickly%20adhere%20to%20the%20back%20of%20your%20mixing%20spoon.%20%20The%20longer%20you%20cook%20it,%20the%20harder%20it%20will%20become%20when%20it%20cools%20until%20it%20is%20difficult%20to%20work%20with.%20%20To%20thin%20it,%20add%20a%20small%20splash%20of%20milk%20and%20mix%20well.%3C/p%3E%3Cp%3E*You%20will%20only%20need%20two%20tablespoons%20of%20caramel%20to%20make%20the%20icing...but%20I%20found%20other%20ways%20to%20use%20the%20remaining%20caramel%20(ice%20cream%20topping,%20straight%20off%20the%20spoon,%20etc.).%3C/p%3E%3Cp%3EAlso%20linking%20up%20to:%3C/p%3E){kind=link}
