- In a skillet, saute/fry sliced red bell peppers and sliced onions in 1/4 c. butter for 5 min. Add in sliced zucchini, sliced mushrooms, and salt; cook till tender, stirring occasionally. Remove the vegetables and set aside, keeping hot.
- Beat Large eggs and lowfat milk in a bowl. Add in 2 Tbsp. butter to the skillet and cook the Large eggs till almost set, stirring frequently. Stir in grated cheddar cheese. Serve the Large eggs alongside the vegetables.
- This recipe yields 4 servings.
