Fettuccine With Saffron And Mascarpone Sauce

Ingredientes

  • 18 ounce Fettuccine, (18 to 24)
  • 2 lrg Shallots, (2 to 3)
  • 1 x Garlic clove
  • 4 Tbsp. Extra virgin olive oil
  • 1 pch Saffron strands
  • 1 x Glass dry white wine
  • 1 lb Mascarpone cheese Salt and pepper
  • 1 handf torn fresh basil leaves to garnish

Direcciones

  1. Cook the pasta in plenty of boiling salted water for about 10 min.
  2. Finely chop the shallots and garlic. In a large frying pan heat the oil, add in the shallots and garlic and fry for 2-3 min.
  3. Add in the saffron, then half of the wine and finally add in the Mascarpone cheese. Simmer gently for a few min, add in the remaining wine, and season to taste with salt and pepper.
  4. Drain pasta, add in sauce and garnish with basil leaves.
  5. NOTES : This is a rich creamy dish that is very simple to prepare.
