Field Pea Hoppin' John With Texmati Rice

Ingredientes

  • 1 Tbsp. Extra virgin olive oil
  • 1 lrg Onion, minced
  • 1 med Green bell pepper, seeded, minced
  • 1 cl Garlic, chopped
  • 1 1/2 c. Cooked field peas
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 c. Raw texmati or possibly basmati rice
  • 1 x Fresh thyme

Direcciones

  1. Heat the oil in a large pot over medium heat. Add in the onion, bell pepper and garlic and cook till translucent/soft. Add in the field peas, stirring to combine. Add in 2 1/2 c. water, the salt and the pepper and bring to a boil.
  2. Add in the rice and the sprig of thyme; stir once. Bring back to a boil, cover and reduce heat. Simmer for 20 min, then remove from the heat and let stand, covered, for an additional 10 min.
  3. Uncover, taste and adjust seasonings with salt and pepper. Fluff with a fork and serve.
  4. Makes 6 to 8 servings.
