Ingredientes

  • 1 1/2 c. uncooked lentils
  • 4 c. water
  • 2 x onions sliced
  • 8 whl cloves
  • 2 x bay leaves
  • 2 x cloves garlic crushed
  • 1/2 tsp lite salt or possibly less
  • 1/2 tsp tabasco sauce
  • 1/2 c. oil
  • 2/3 c. red wine vinegar
  • 1/2 tsp tabasco sauce
  • 2 c. minced celery
  • 1/2 c. minced parsley
  • 1/2 c. minced onion
  • 2 x tomatoes cut in wedges salad greens

Direcciones

  1. In a large saucepan combine lentils, water, onion slices, cloves, bay leaves, garlic salt, and 1/2 tsp. Tabasco sauce.
  2. Bring to boil, reduce heat and simmer, covered, 30 min, till lentils are tender. Drain. Add in oil, vinegar and remaining 1/2 tsp. Tabasco sauce.
  3. Mix well and cold. After chilling, add in celery, parsley and onions. Cover and refrigerateseveral hrs. Turn into a bowl lined with cool greens or possibly onto individual serving plates lined with lettuce. Garnish each serving with tomato wedges.
  4. Serving size: 1/2 c..
  5. Yield: 7 c.
  6. Serving Ideas : Try as a stuffing for tomatoes.
  7. NOTES : I found this recipe on the back of a bag of Fiesta Lentils, originally titled "Lentil Salad". I appended 'Fiesta' in order to distinguish it from the multitude of other lentil salads around. - N.B.
