Ingredientes

  • 2 c. cooked white or possibly brown rice
  • 1/4 c. red onion, finely minced
  • 1 1/2 c. cooked pinto, red or possibly kidney beans
  • 2 c. corn
  • 1 c. ripe tomato, diced
  • 1/4 med jicama, peeled and diced (about 1 c.)
  • 1/2 med green bell pepper, chopped
  • 1/2 c. sliced black olives
  • 1/2 c. Homemade or possibly bottled vinaigrette dressing

Direcciones

  1. Mix all ingredients except dressing in large bowl. Add in dressing. Marinate at least 1 hour before serving. Garnish with Pepitas and/or possibly sunflower seeds. About 6 1/2 c., 4-6 servings.
  2. Note: If you cannot locate jicama (try a Hispanic market), substitute sliced radishes
