Receta Fig, Walnut and Goats Cheese Feta Tarte Tatin
Figs and Goats Cheese is a tried and tested combination you will find it in salads, appetizers or even pastries, the natural sweetness of the fruit against the salty feta explodes into this wonderful mixture of flavours that complements each other.
Several weeks ago my colleague who supplies me a lot of home grown vegetables and fruits brought a lot of figs in the office, figs here in New Zealand is quite an expensive commodity which in some cases the price per fruit reaches $2.00 so I took the opportunity and grabbed a lot and make something out of it when I come home.
Knowing that cheese works well with figs I then decided to make a pasty since I have some extra in our freezer. This pastry I decided to do is a tarte tatin, with some added texture of walnuts topped with some feta. It’s quite an easy pastry to do as long as you have medium sized ramekin or something similar then preparing this would be a breeze. Fig, Walnut and Goats Cheese Feta Tarte Tatin Save Print Prep time Cook time Total time Ingredients 1 large square sheet flaky pastry 8 fresh figs, cut in half ½ cup walnuts, roughly chopped 100 g butter 100 g caster sugar goat’s cheese, crumbled for topping Instructions Divide your flaky pastry in four equal parts, using the rim side of your ramekin press down into one of the divided sheets to cut a circle that fits in your ramekin. If you’re flaky pastry is not enough use another sheet. Place sheets in the freezer while preparing the rest of your ingredients. In a saucepan melt the butter and add the sugar, cook in medium low heat until the sugar dissolves and it becomes like caramel in texture. Pour and divide caramel mixture in 4 ramekins. Place 4 half section figs flesh side down, sprinkle some chopped walnuts then press your pastry circles on top, tuck any excess on the edges. Bake in a 190C preheated oven for 25 minutes until pastry turns golden brown. Remove ramekins from oven and let it cool. Once it cool enough to handle, loosen pastry and flip it over in a serving platter, serve with crumbled goat’s cheese on top. 3.5.3208
