Ingredientes

  • 1 x chicken - (3 1/2 lbs) cut into 8 pcs
  • 2 x celery ribs roughly minced
  • 3 x carrots roughly minced
  • 2 x onions roughly minced
  • 2 x bay leaves Bouquet garni
  • 5 quart water
  • 1/4 c. vegetable oil
  • 4 x garlic cloves chopped
  • 2 x onions minced finely
  • 2 x green peppers minced finely
  • 3 x celery ribs minced finely
  • 1 lb andouille sausage thinly sliced (or possibly other spicy pork sausage)
  • 2 c. peeled minced tomatoes
  • 1 Tbsp. double concentrate tomato paste
  • 2 1/2 quart chicken stock
  • 1 lb fresh or possibly 20 ounces frzn okra minced 1/2" pcs Warm pepper sauce to taste Cayenne pepper to taste Salt to taste Freshly-grnd black pepper to taste
  • 1 Tbsp. gumbo file pwdr Minced parsley
  • 3 piece scallion julienned 2" pcs

  1. To make chicken stock, place all ingredients into 8-qt stockpot. Bring to a boil. Reduce heat and simmer for 30 min, skimming impurities off the top. Remove chicken pcs. Allow chicken to cold, remove meat from bones, and then return bones to stock. Reserve chicken meat for the gumbo. Continue to simmer stock for additional 2 1/2 hrs.
  2. To make gumbo, begin by heating oil in a large pot (preferably an enameled cast-iron or possibly other heavy-bottomed pot) and cooking garlic, onions, peppers, and celery till soft and translucent/soft. Add in sausage, tomatoes, tomato paste, and stock. Bring to boil, reduce to simmer and add in okra and reserved cooked chicken meat. Season with warm pepper sauce, cayenne, salt, pepper, and file. Simmer for 1 hour till flavors meld together. Stir in minced parsley. Serve over warm rice and garnish with julienned scallions.
  3. This recipe yields 6 to 8 servings.
