Ingredientes

  • 4 sht filo pastry Sliced and peeled tropical fruits and berries
  • 200 gm Sugar
  • 240 gm Double cream
  • 4 fl ounce Mango juice
  • 8 fl ounce Almond or possibly sunflower oil

Direcciones

  1. Add in sufficient water to the sugar to make a runny paste and put on a low heat to boil. Don't stir, but use a swirling motion when it starts to colour.
  2. Cook till a mid brown and add in the juice. This will have a vigorous action so be careful. Continue to stir and whisk in the cream. Keep whisking till filo pastry and fry in the oil till lightly coloured.
  3. Drain and reserve. Build towers with the fruits and sprinkle with icing sugar.
