‘Count your blessings’ …Oh yes, have been doing the same quite often since I started my blog. One such blessing is the countless foodie friends I get to connect through Lite Bite and other social medias on line. We have a good time sharing our passion for food, exchange recipes, discuss personal developments, point out mistakes, rectify them and grow together. The generous support that most of the bloggers shower for each other is commendable.

The other day one of my blogger friends Chinmayi tweeted this “When i think of healthy baking… i only think of you!!! I am your fan “ and asked me to share a link for healthy & easy cookies. Our cookie tweets further tempted me to bake some of mine but my kids had a difference of opinion and wanted some sort of chocolate dessert for the night. I baked this Finger millet chocolaty cake, the slices drizzled with Nutella sauce…Mmm.. a real delight. Oh..and no one could make out that it had the healthy wholegrain Finger millet/Ragi in it!

Finger millet or Ragi and the flour

Ingredients;

Batter

Method; Sift the finger millet flour, all purpose flour, baking soda, baking powder and cinnamon twice in a large vessel. Take another vessel and add curd, oil, milk and sugar in it, beat the liquid mixture with a fork till the sugar is dissolved.

Preheat the oven to 190°C for about 10 minutes. Grease a round cake tin with oil.

Add the dry ingredients to the wet liquid mixture little by little and fold lightly making circular motions.

My cake is bursting out with laughter..love that deep furrow on top...

Pour the cake batter into the greased cake tin and bake for 30 minutes or till the cake is done. Check the cake by inserting a clean knife in it, if it comes out clean the cake is fully baked.

Dusted with powder sugar..

Finger millet blends well with cocoa which will mar the husky smell of the grain.

Chocolaty delight!

Dust the cake with powder sugar and enjoy the chocolaty treat.

Mmm..drizzled with Nutella sauce..

A dessert could not get better than this cake which has everything to indulge in and at the same time good for your health too.

Hard to resist...

Serve the Finger Millet Chocolate cake with chocolate syrup. I made an instant chocolaty syrup by mixing 2 tbsp. of Nutella with 1 tsp. of milk in it. And the cake was gone before I could even think of storing it for the next day

Notes;

Replace the finger millet powder with all purpose flour if you do not have it.

Try the cake with wholewheat flour for more healthier option.

The cake is not very sweet, increase sugar a little if you like sweet bakes.
