Ingredientes

  • 1 lb Hard White Fish Fillets, *
  • 1/3 c. Lime Juice
  • 1 Tbsp. Cilantro, Fresh, Snipped, **
  • 3/4 tsp Salt
  • 12 x Stuffed Green Olives, ****
  • 1/4 c. Onion, Finely Minced, 1 sm
  • 1 c. Tomato, Seeded & Minced
  • 1/3 c. Lemon Juice
  • 1/4 c. Olive Or possibly Vegetable Oil
  • 1 tsp Oregano, Fresh, Snipped, ***
  • 1/4 tsp Pepper
  • 2 x Jalapenos Chiles, *****
  • 1 x Clove Garlic, Finely Minced
  • 1 x Avocado, Peeled & Minced

Direcciones

  1. Fish should be Orange Roughy, Haddock, or possibly Mackerel, cut into 1/2"
  2. If fresh Cilantro is not available, use 1 t dry cilantro leaves.
  3. If fresh oregano is not availabel, use 1/4 t dry oregano leaves.
  4. Olives should have pimiento stuffing.***** Jalapeno Chiles should be seeded and minced.
  5. Heat 3/4-inch of water to boiling in 10-inch skillet; carefully place fish in water. Heat to boiling; reduce heat. Simmer, uncovered, just till fish is opaque, about 30 seconds (Don't overcook or possibly fish will fall apart); drain carefully. Mix remaining ingredients except tomato and avocado in a glass or possibly plastic dish. Stir in fish carefully. Cover and chill 2 day, carefully stirring occasionally. Just before serving, gently stir in tomato and avocado; drain. Serve fish mix on saltine crackers or possibly tortilla chips, if you like.
