Ingredientes

  • 1 x Fish fillet - (abt 6 ounce) (i.e. red snapper, salmon, halibut, trout)
  • 1 tsp Unsalted butter - (to 2 tspns) (optional) Salt to taste Freshly-grnd black pepper to taste
  • 1 sm Red bliss potato blanched, sliced
  • 3 x Baby carrots - (to 4) blanched
  • 2 tsp Minced shallots or possibly scallions
  • 1 x Squeeze lemon Fresh minced dill
  • 2 Tbsp. Chopped or possibly julienned roasted red pepper
  • 1 tsp Chopped jalapeno
  • 2 Tbsp. Corn
  • 1 tsp Chopped garlic
  • 1 x Squeeze lime Minced fresh coriander

Direcciones

  1. Preheat oven to 350 degrees.
  2. Place the fillet in the center of a 10-inch square of aluminum foil. Scatter vegetables of choice over fillet and sprinkle with desired citrus juice and herbs. Place dots of butter over vegetables and fillet and season with salt and pepper. Bring two opposite sides of foil square together and fold to seal. Fold up both ends to create a foil "envelope".
  3. Bake for 12 to 15 min. Carefully unfold foil, beware of steam, and plate cooked fillet and vegetables.
  4. This recipe yields one serving.
