Fish In Pineapple Lime Sauce

Ingredientes

  • 1/2 c. unsweetened pineapple juice
  • 1/3 c. fresh lime juice (3 to 4 limes)
  • 1 1/4 lb fish fillets, such as orange roughy, halibut or possibly cod
  • 1/2 tsp ornstarch dissolved in 1 tbsp. water
  • 1 Tbsp. minced cilantro, fresh tarragon, parsley or possibly other herb

Direcciones

  1. Heat pineapple and lime juices to a simmer in a large non-stick skillet over medium heat.
  2. Add in fillets and poach 1 minute.
  3. Carefully turn fish over.
  4. Cover and simmer 5 to 7 min.
  5. Transfer fish to a large plate and cover to keep hot; reserve juices in the skillet.
  6. Stir cornstarch mix into pan juices.
  7. Simmer 1 minute.
  8. Pour over fillets.
  9. Sprinkle with herbs and serve at once.
  10. Makes 4 servings.
