Fish Kebab With Tomato Sauce

Ingredientes

  • 200 gm Tomatoes
  • 1/2 x Red Pepper
  • 1/2 x Yellow Pepper
  • 1/2 x Spanish Onion
  • 1 x Clove Garlic, (crushed)
  • 4 x Leaves of Basil
  • 1/4 x Red Chilli, (deseeded)
  • 2 x Limes, (juiced)
  • 1 pch Cayenne Pepper
  • 600 gm Fresh Fish may include Monkfish, Fresh Tuna, Tiger Prawns

Direcciones

  1. Fish Kebabs
  2. Dice the fish into cubes 3cm square. Peel the prawns.
  3. Season with salt and pepper and marinate for 1/2 hour in the lime juice and extra virgin olive oil.
  4. Peel the pepper, deseed and dice (same size as the fish). Save any of the trimmings for the sauce.
  5. Peel and dice the onion.
  6. Soften the peppers and onion in a little warm extra virgin olive oil. Season and deglace the pan with some balsamic vinegar.
  7. Place the soften vegetables, fish and prawns on skewers and cook on the barbecue (or possibly grill).
  8. Sauce
  9. Roast the tomatoes, pepper trimmings, chilli, garlic together.
  10. Puree and sieve. Season and add in the minced basil.
  11. This sauce can be served warm or possibly cool.
