Dressing ingredients.
Mince jalapeno peppers and chop scallions.
Combine all dressing ingredients in blender or food processor.
Process until thoroughly combined. If the dressing is too thick add more buttermilk to adjust thickness.
Vegetable ingredients.
Assemble greens while fish is cooking and squash is being grilled. Refrigerate until needed.
Fry or bake fish depending on what type is being used.
Bake according to package directions.
Slice grilled squash and add to salad. Top with cooked fish. Serve baked tortilla strips and dressing seperately at the table.
