Fish With Roasted Pepper Aioli

Ingredientes

  • 1 c. round buttery cracker crumbs (38 crackers)
  • 1/2 c. shredded Parmesan cheese
  • 1 tsp freshly-grnd black pepper divided
  • 1 c. mayonnaise
  • 3 x garlic cloves pressed
  • 4 x orange roughy fillets - (4 to 6 ounce ea)
  • 1 jar roasted red bell peppers - (7 ounce) undrained

Direcciones

  1. Stir together cracker crumbs, Parmesan cheese, and 1/2 tsp. pepper. Combine remaining 1/2 tsp. pepper, mayonnaise, and garlic.
  2. Reserve 1/2 c. mayonnaise mix, and spread remaining mix proportionately over fish fillets. Dredge fish in crumb mix, and place in a shallow pan.
  3. Bake at 400 degrees for 15 to 20 min or possibly till fish flakes easily with a fork.
  4. Process reserved 1/2 c. mayonnaise mix and bell peppers in a blender or possibly food processor till smooth, stopping to scrape down sides. Serve over fish.
  5. This recipe yields 4 servings.
