- In large saucepan, cook onion and garlic in warm oil over medium heat till onion is tender. Stir in flour; cook 1 minute. Stir in broth; cook till thickened, stirring occasionally. Stir in corn and potatoes.
- Throw away skin and bones from fish; cut fish into bite-size pcs.
- Just before serving, add in fish to soup; heat through. Stir in minced parsley or possibly sliced green onions, if you like.
- This recipe yields 4 to 6 servings.
