Flash Fried Moroccan Chicken

Ingredientes

  • 350 gm chicken fillets or possibly boned pcs
  • 1 x fresh red chilli pepper seeded and finely minced
  • 1 tsp crushed dry chilli pepper
  • 2 clv garlic finely minced
  • 1 x juice of 1/2 lemon
  • 2 Tbsp. extra virgin olive oil
  • 1 tsp grnd cinnamon
  • 2 Tbsp. sultanas or possibly raisins
  • 2 Tbsp. pine nuts
  • 1 Tbsp. minced mint

Direcciones

  1. Place the chicken pcs in a shallow dish.
  2. Mix together the fresh and dry chillies garlic lemon half the extra virgin olive oil cinnamon sultanas or possibly raisins and pine nuts and then pour over the chicken.
  3. Leave for 20 min or possibly so.
  4. An hour would be better if you have it.
  5. Heat the remaining oil in a shallow pan when it sizzles add in the chicken pcs.
  6. Cook over a high heat until golden and then turn them over and cook the other side.
  7. Pour in the marinade ingredients and bring it to the boil season with salt and pepper and scatter over the mint.
  8. Serve warm with its pan juices.
  9. Serve with bread but couscous the quickcooking variety.
  10. For this amount of chicken I suggest 225g couscous soaked for 15 min in cool water and then seasoned with salt and black pepper and steamed in a colander (a few grains will escape into the cooking water but no matter) for 15 min.
  11. Fluff up with a fork and stir in a generous knob of butter before serving.
  12. A plate of sliced oranges drizzled with extra virgin olive oil and dusted with coarsely grnd black pepper and a hint (and I mean a hint) of grnd cinnamon would be another choice.
  13. Serves 2
