Flavored Homemade Vinegars
Make Great (Make Ahead) Gifts.
My favorites are:
Violet Vinegar,
Blackberry Vinegar and
Dandelion Vinegar.
Violet Vinegar~
Last spring, my neighbors yard was full of violets.
I grabbed a couple of canning jars and headed outside.
I sat on the ground, the sun on my face and
filled both jars with violets in no time.
I came inside and made this wonderful and
delicate flavored vinegar.
Violet Vinegar will make a great Christmas gift.
Violet Vinegar (must be made ahead)
Go into your yard and pick 1 or 2 cups fresh violet flowers. (from un-sprayed areas)
Gently rinse violets if you feel it's necessarily.
Put violets in a clean glass jar (a jar large enough to hold 3 cups of liquid) Fill jar 3/4 full of violets
Pour 2 cups white wine vinegar over violets. Cap jar with a non-metallic lid (Vinegar will corrode metal) If you only have a metal cap, place a layer or two of plastic wrap between cap and vinegar
Let this mixture sit for a week or two in a cool, dark place. Strain the vinegar. Store vinegar in a bottle with a cork cap in a cool, dark place for 6 months to a year or longer.
Blackberry Vinegar~
This summer when blackberries are ripe or in season,
buy or pick some extra blackberries.
You can then make blackberry vinegar to give away as Christmas gifts.
- Blackberry Vinegar (must be made ahead)
- 2 cups blackberries, washed
- 2 cups white wine vinegar
- 2 cups sugar
- Wash blackberries
- Place blackberries in a large bowl
- Cover with vinegar
Place a plate on top of the mixture
Place a heavy object on top of the plate
Leave the mixture for 7 days
Stirring mixture every day
After one week:
Uncover and stir.
With the back of a spoon or ladle press down to mash the berries and release their juices.
Pour the mixture through a sieve into a large saucepan
Add the sugar to the liquid
Stir and heat until boiling
Reduce heat and simmer for 15 minutes
Pour mixture into sterilized bottles and cover tightly
Label and date the bottle
Store in a dark place for several months or up to one year
Dandelion Vinegar~
This summer when your standing in your yard..

Make dandelion vinegar to give away at Christmas~
Dandelion Vinegar (must be made ahead)
1 quart dandelion blossoms
Good quality: apple cider vinegar (organic) or white wine vinegar
Pack a one quart mason jar with dandelion blossom heads (rinse to remove any bugs)
Pour in enough vinegar to cover blossoms
Cover and store in a cool, dark cupboard for four weeks
Using a cheesecloth-lined colander, strain the vinegar of all solids
Transfer to a clean, sterilized jar, cover jar with non-metallic cover.
Store in a cool, dark, place for 6 months up to one year
All flavored vinegar can be used in the same way that you would use; white wine vinegar,
balsamic vinegar or apple cider vinegar.
Vinegar
