,%20so%20I%20took%20a%20piece%20eager%20to%20enjoy%20my%20portion%20of%20Nonna%E2%80%99s%20lasagna.%20My%20first%20bite%20was%20a%20bitter%20disappointment.%20Instead%20of%20melt-in-your-mouth,%20homemade%20pasta%20lasagna,%20I%20got%20limp%20eggplant%20smothered%20in%20cheese.%20Please%20don%E2%80%99t%20misunderstand%20me,%20there%20was%20nothing%20lacking%20in%20my%20Nonna%E2%80%99s%20cooking;%20there%20was,%20however,%20a%20lack%20of%20expectations%20being%20met%20on%20my%20part.%20I%20decided%20I%20didn%E2%80%99t%20like,%20mostly%20because%20it%20was%20not%20what%20I%20was%20expecting%20out%20of%20that%20first%20bite.%20I%20think%20I%20ended%20up%20slipping%20the%20rest%20to%20my%20cousin%20to%20finish%20for%20me.%3C/p%3E%3Cp%3EFast%20forward%20to%20now:%20Several%20of%20my%20friends%20have%20been%20talking%20about%20eggplant%20Parmesan,%20and%20when%20I%20found%20Marcella%E2%80%99s%20recipe,%20I%20decided%20I%20ought%20to%20give%20it%20another%20try.%20I%20sweated%20the%20eggplant,%20coated%20it%20in%20flour,%20and%20fried%20it.%20Oh,%20and,%20I%20almost%20burned%20down%20our%20apartment%20building%20in%20the%20process.%3C/p%3E%3Cp%3EAs%20I%20sometimes%20do,%20I%20got%20ahead%20of%20myself%20and%20wasn%E2%80%99t%20paying%20attention%20to%20the%20hot%20oil%20popping%20and%20snapping%20on%20my%20stove%20top.%20I%20dropped%20the%20covered%20eggplant%20in%20and%20turned%20my%20back%20on%20the%20stove.%20The%20next%20thing%20I%20know,%20smoke%20has%20completely%20filled%20the%20entire%20kitchen%20(not%20that%20it%20takes%20much)%20and%20our%20smoke%20detector%20is%20wailing%20like%20there%E2%80%99s%20no%20tomorrow%20(at%20least%20we%20know%20our%20smoke%20detector%20works%20now).%20So,%20I%20pull%20the%20pan%20off%20the%20burner%20and%20rush%20to%20fling%20open%20our%20balcony%20door%20to%20get%20air%20circulating%20into%20our%20kitchen.%20Once%20I%20establish%20that%20no%20major%20damage%20had%20been%20done%20to%20our%20home,%20our%20stove,%20or%20our%20pan,%20I%20behold%20the%20charcoal%20that%20is%20floating%20atop%20the%20still%20crackling%20oil.%20Well,%20that%20batch%20of%20eggplant%20is%20shot.%20I%20clean%20out%20the%20pan%20and%20start%20over,%20this%20time%20diligently%20hovering%20over%20the%20pan%20to%20make%20sure%20it%20doesn%E2%80%99t%20get%20too%20hot%20or%20the%20eggplant%20left%20in%20too%20long.%3C/p%3E%3Cp%3EI%20had%20hoped%20to%20have%20a%20beautiful%20Eggplant%20Parmesan%20in%20the%20oven%20when%20Will%20got%20home,%20instead,%20he%20was%20welcomed%20by%20a%20smokey%20kitchen%20and%20a%20distraught%20wife.%20I%20was%20contemplating%20dumping%20the%20whole%20thing%20and%20ordering%20pizza%20when%20he%20walked%20in%20the%20door.%20Wonderful%20husband%20that%20he%20is,%20he%20encouraged%20me%20to%20finish%20the%20dish.%20I%20promised%20to%20order%20him%20the%20pizza%20if%20it%20turned%20out%20a%20complete%20mess.%20Somehow,%20I%20managed%20to%20avoid%20burning%20the%20rest%20of%20the%20eggplant,%20and%20I%20assembled%20the%20dish%20and%20put%20it%20in%20the%20oven.%20That%20first%20bite%20made%20the%20mess%20of%20making%20it%20melt%20away.%20For%20two%20people%20who%20don%E2%80%99t%20normally%20like%20eggplant,%20Will%20and%20I%20both%20enjoyed%20our%20dinner.%20The%20fried%20eggplant%20was%20delicious%20paired%20with%20the%20tomato%20and%20cheese.%20And%20the%20best%20part%20was%20that%20we%20didn%E2%80%99t%20end%20up%20needing%20to%20order%20the%20pizza%20after%20all.%3C/p%3E%3Cp%3EEggplant%20Parmesan%3C/p%3E%3Cp%3EFrom%20Marcella%20Hazan%E2%80%99s%20Essential%20of%20Classic%20Italian%20Cooking%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3ESlice%20the%20eggplant%20and%20steep%20it%20in%20salt%20for%2030%20minutes.%3C/p%3E%3Cp%3EIn%20a%20large%20frying%20pan,%20pour%20enough%20oil%20into%20it%20to%20come%201-1/2%20inches%20up%20the%20sides,%20and%20turn%20the%20heat%20up%20to%20high.%20When%20you%20have%20dried%20the%20eggplant%20thoroughly%20with%20paper%20towels,%20dredge%20the%20slices%20in%20the%20flour,%20coating%20them%20on%20both%20sides.%20Do%20only%20a%20few%20slices%20at%20a%20time%20at%20the%20moment%20you%20are%20ready%20to%20fry%20them,%20otherwise%20the%20flour%20coating%20will%20become%20soggy.%20After%20coating%20with%20flour,%20fry%20the%20eggplant.%3C/p%3E%3Cp%3EPut%20the%20tomatoes%20and%20olive%20oil%20in%20another%20skillet,%20turn%20the%20heat%20on%20to%20medium%20high,%20add%20salt,%20stir,%20and%20cook%20the%20tomato%20down%20until%20it%20is%20reduced%20by%20half.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees.%3C/p%3E%3Cp%3ECut%20the%20mozzarella%20into%20the%20thinnest%20possible%20slices.%20Wash%20the%20basil,%20and%20tear%20each%20leaf%20into%20two%20or%20more%20pieces.%3C/p%3E%3Cp%3ESmear%20the%20bottom%20and%20sides%20of%20the%20baking%20dish%20with%20butter.%20Put%20in%20enough%20fried%20eggplant%20slices%20to%20line%20the%20bottom%20of%20the%20dish%20in%20a%20single%20layer,%20spread%20some%20of%20the%20cooked%20tomato%20over%20them,%20cover%20with%20a%20layer%20of%20mozzarella,%20sprinkle%20liberally%20with%20grated%20Parmesan,%20distribute%20a%20few%20pieces%20of%20basil%20over%20it,%20and%20top%20with%20another%20layer%20of%20fried%20eggplant.%20Repeat%20the%20procedure,%20ending%20with%20a%20layer%20of%20eggplant%20on%20top.%20Sprinkle%20with%20grated%20Parmesan,%20and%20place%20the%20dish%20in%20the%20upper%20third%20of%20the%20preheated%20oven.%3C/p%3E%3Cp%3EOccasionally%20eggplant%20Parmesan%20throws%20off%20more%20liquid%20as%20it%20bakes%20than%20you%20want%20in%20the%20pan.%20Check%20after%20it%20has%20been%20in%20the%20oven%20for%2020%20minutes%20by%20pressing%20down%20the%20layered%20eggplant%20with%20the%20back%20of%20a%20spoon,%20and%20draw%20off%20any%20excess%20liquid%20you%20may%20find.%20Cook%20for%20another%2015%20minutes,%20and%20after%20taking%20it%20out%20allow%20it%20to%20settle%20for%20several%20minutes%20before%20bringing%20it%20to%20the%20table.%20Serve%20and%20enjoy!%3C/p%3E){kind=link}
