.%20I%20was%20planning%20on%20only%20making%20one%20of%20them...and%20of%20course%20I%20went%20with%20the%20brownies%20(that's%20a%20no%20brainer).%20After%20seeing%20everyone's%20cracker%20post...I%20couldn't%20resist.%20I%20HAD%20to%20give%20them%20a%20try.%20And%20let%20me%20tell%20you....I%20am%20so%20happy%20I%20did.%20They%20are%20easy%20to%20make%20and%20taste%20great!%20You%20have%20the%20earthiness%20of%20the%20whole%20wheat%20flour,%20the%20nuttiness%20of%20the%20flaxseed%20and%20the%20slightest%20heat%20from%20the%20cracked%20pepper.%20And%20you%20can%20make%20them%20any%20shape%20you%20choose!%3C/p%3E%3Cp%3E(time%20to%20get%20out%20your%20cookie%20cutters%20and%20have%20a%20little%20fun)%3C/p%3E%3Cp%3EOne%20side%20note....if%20you%20choose%20to%20purchase%20the%20Joy%20the%20Baker%20Cookbook%20(and%20I%20highly%20recommend%20that%20you%20do)%20you%20might%20notice%20that%20cracked%20pepper%20is%20not%20on%20the%20list%20of%20ingredients.%20A%20mild%20oversight%20somewhere%20along%20the%20line.%20It%20has%20been%20determined,%20and%20confirmed%20by%20Joy,%20that%201/2%20tsp%20is%20what%20should%20be%20there.%20(it's%20now%20there,%20in%20my%20copy%20of%20the%20book,%20written%20in%20my%20handwriting).%3C/p%3E%3Cp%3EOne%20more%20side%20note:%20Flaxseed%20meal.%20It's%20a%20bit%20pricey.%20I%20happened%20to%20already%20have%20some%20on%20hand%20from%20some%20bread%20I%20made%20a%20while%20back%20(apparently%20it%20keeps%20very%20well%20in%20a%20very%20cold%20fridge).%20But%20I%20did%20see%20it%20at%20one%20of%20my%20local%20health%20food%20stores,%20sold%20in%20a%20bin.%20Which%20is%20great...a%20buck%20something%20a%20pound%20and%20I'd%20only%20have%20to%20purchase%20as%20much%20as%20I%20needed.%20Hopefully%20you%20have%20something%20near%20you%20that%20does%20the%20same.%20I%20was%20able%20to%20purchase%20the%20golden%20flaxseed%20in%20the%20same%20manner.%3C/p%3E%3Cp%3EFlaxseed%20and%20Cracked%20Pepper%20Crackers%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350'%20F.%20Line%202%20cookie%20sheets%20with%20parchment%20paper.%3C/p%3E%3Cp%3EIn%20a%20medium%20sized%20whisk%20together%20the%20flaxseed,%20flaxseed%20meal,%20whole%20wheat%20flour%20(I%20used%20white%20whole%20wheat),%20all%20purpose%20flour,%20baking%20soda,%20salt%20and%20cracked%20pepper.%3C/p%3E%3Cp%3EAdd%20the%20butter%20and%20work%20it%20into%20the%20flour%20mixture,%20quickly,%20using%20the%20tips%20of%20your%20fingers.%3C/p%3E%3Cp%3EMake%20a%20well%20in%20the%20center%20and%20add%20the%20buttermilk.%20With%20a%20fork,%20work%20everything%20together%20until%20all%20of%20the%20flour%20mixture%20has%20been%20incorporated%20with%20the%20buttermilk,%20making%20sure%20every%20bit%20of%20the%20flour%20is%20moistened.%20You%20will%20have%20a%20shaggy%20dough%20but%20no%20worries....it'll%20come%20together%20very%20nicely%20in%20a%20minute.%3C/p%3E%3Cp%3ETurn%20the%20dough%20out%20onto%20a%20lightly%20floured%20surface%20and%20knead%20the%20dough%20about%2010%20times%20to%20bring%20everything%20together.%20Wrap%20in%20plastic%20wrap%20and%20chill%20in%20the%20fridge%20for%20about%2010%20minutes.%3C/p%3E%3Cp%3EOnce%20chilled,%20cut%20the%20dough%20in%20half%20(place%20one%20half,%20wrapped%20in%20plastic)%20back%20into%20the%20fridge.%20With%20the%20remaining%20half,%20roll%20out%20until%20it's%20about%201/8%20of%20an%20inch%20thick.%20Which%20basically%20means...as%20much%20as%20you%20possibly%20can.%20You%20don't%20want%20the%20dough%20to%20be%20thick%20otherwise%20your%20crackers%20will%20have%20more%20of%20a%20biscuit%20texture%20than%20a%20nice%20crisp%20cracker.%3C/p%3E%3Cp%3ECut%20the%20crackers%20into%201%201/2%22%20rounds,%20or%20use%20a%20pizza%20cutter%20to%20make%20squares...or%20use%20your%20favorite%20small%20cookie%20cutter.%20If%20the%20crackers%20are%20much%20bigger%20than%201%201/2%22,%20you%20will%20need%20to%20increase%20the%20cooking%20time%20accordingly.%3C/p%3E%3Cp%3EPlace%20on%20a%20cookie%20sheet%20and%20prick%20each%20one%20a%20few%20times%20with%20a%20fork%3C/p%3E%3Cp%3EBake%20for%2015%20to%2018%20minutes%20or%20until%20just%20golden%20brown%20around%20the%20edges.%20Allow%20to%20cool%20before%20storing%20them%20in%20an%20airtight%20container.%3C/p%3E%3Cp%3EStore%20at%20room%20temperature%20for%20up%20to%204%20days.%3C/p%3E%3Cp%3EAnd%20there%20you%20have%20a%20whole%20crud%20load%20of%20delicious,%20healthy%20crackers%20that%20you've%20made%20yourself!%3C/p%3E%3Cp%3EServe%20with%20your%20favorite%20cracker%20topping....cheese,%20savory%20spread%20such%20as%20Garlic%20Jelly%3C/p%3E%3Cp%3EBut%20to%20be%20honest%20with%20you....I%20preferred%20them%20as%20is....plain%20and%20simple,%20straight%20out%20of%20the%20handy%20dandy%20zip%20lock%20baggy%20on%20my%20desk....waiting%20to%20be%20snacked%20on%20throughout%20the%20day.%20Or%20as%20a%20nice%20little%20side%20while%20enjoying%20my%20Merlot%20night%20cap.%3C/p%3E%3Cp%3EHowever%20you%20decide%20to%20eat%20these%20tasty%20little%20morsels....make%20sure%20you%20share%20with%20a%20friend%20and%20here%20the%20awe%20in%20their%20voice%20as%20they%20say...%22You%20made%20these?!%22%3C/p%3E%3Cp%3E(I'm%20sad%20to%20say%20that%20I%20just%20popped%20the%20last%20cracker%20in%20my%20mouth.%20Gee%20darn...I%20might%20have%20to%20make%20some%20more)%3C/p%3E){kind=link}
