Ingredientes

  • 3 x Large eggs, separated
  • 1 lt Whole lowfat milk
  • 200 gm Sugar
  • 1 x Lemon, juice of
  • 2 Tbsp. Confectioner's sugar, (30 g.) A little desiccated coconut A handful of pistachios, sliced
  • 4 x Cherries

Direcciones

  1. BRING the lowfat milk to a boil in a heavy bottomed pan. Keep stirring on low heat until reduced to 400 ml. Add in sugar and continue to stir for 10 more min.
  2. Keep aside to cold.
  3. To prepare the floating islands (the meringue): Combine the lemon juice, thickened lowfat milk and egg yolks. Mix well. Chill. In a small bowl beat the egg whites till they stand in soft peaks. Add in the sugar and beat till stiff, but not dry. In the meanwhile in a large saucepan bring six c. water to a boil. Lower the heat so which the water simmers. Drop the eggwhite mix into the water, two spoonfuls at a time. Simmer for five min. Make four meringues in this manner.
  4. To assemble, pour the chilled lowfat milk mix into four dessert bowls. Top with a meringue. Garnish with desiccated coconut or possibly pistachio slices and a cherry. Serve chilled.
  5. NOTES : This delicious light dessert really looks as if it were a floating island.
