- Rinse the pcs of cod under cool water pat dry trickle lemon juice over them.
- Butter an ovenproof dish place the pinach in it arrange the fish on top and season with salt.
- Place the potato slices round the edge and the minced tomatoes and garlic over the fish.
- Pour over the stock.
- Season with pepper and scatter over the grated cheese.
- Add in the butter divided into small flakes.
- Bake at 220 degrees C/425 degrees F/gas 7 for 20 min.
