Fluffy Buttermilk Pancakes

Start your morning with a warm stack of these light and Fluffy Buttermilk Pancakes topped with warm maple syrup!

My kids are pancake connoisseurs! They’d have pancakes every morning if they could. It’s usually how I bribe them to get up for school. I tell them if they get up early enough I’ll make your favorite pancakes. Unfortunately that usually doesn’t work but it’s definitely worth a shot.

Not only do my kiddos love them but Mr. Mother Thyme does too! Last weekend while we were sitting around the table having breakfast Mr. Mother Thyme asked if I had this recipe on Mother Thyme. He about fell off his chair when I told him no. Honestly I never thought of adding this recipe to Mother Thyme because I figured there’s a gazillion recipes out there for buttermilk pancakes and thought everyone probably has a go-to pancake recipe. After I thought about it for a little bit I decided to share it. Whether you have go-to pancake recipe but always looking to try new ones or you’re still looking for that perfect melt in your mouth buttermilk pancake recipe then look no further! These delicious Fluffy Buttermilk Pancakes have been a recipe I’ve used since even before Mother Thyme existed. Every time I make these everyone literally flips over them! They’re so tender, fluffy and delicious!

These Fluffy Buttermilk Pancakes are super versatile too! I usually make the batter then I’ll ask my family if they want them plain, with chocolate chips, blueberries, you name it! Once I pour the batter in the pan I’ll add chocolate chips, or blueberries on top. I never stir it into the batter. That way I can make a variety of pancakes using just one batter since it never fails my kids usually want different things. I also like to make them plain and then dress them up with berries, banana slices, chopped walnuts or even whipped cream on top. If I serve these with a berry topping I usually use thawed frozen berries so then you get all the yummy juices on top. They’re even yummy wrapped in cooked breakfast sausage too!

What’s great about these is that the possibilities are endless and no matter if you eat them plain drizzled with warm maple syrup or you add your favorite toppings these certainly become a family favorite!

Instructions

Spray a large skillet or griddle with cooking spray and preheat over medium heat.

In a large bowl mix together flour, sugar baking powder and salt.

Make a well In the center and add in buttermilk, milk, egg and melted butter.

Whisk ingredients together until blended.

Once skillet is nice and hot pour 1/4 cup batter in skillet.

Flip pancakes when pinhole size bubbles begin to form on top.

Recipe Notes

Enjoy these pancakes plain or once you pour batter into skillet add in your favorite mix-ins like chocolate chips or blueberries on top of batter before flipping.

Try not to press down on pancakes while they're cooking so they stay nice and fluffy!
