Ingredientes

  • 2 piece dry white fungus - (abt 2 ounce)
  • 2 1/2 c. water
  • 1 c. granulated sugar
  • 1/4 c. rock sugar
  • 1 tsp minced crystallized ginger Grated zest of one lime Juice of one lime
  • 1 x kaffir lime leaf cut thin strips
  • 1/3 c. toasted sliced almonds Lime slices

Direcciones

  1. Pour sufficient hot water over the fungus in a medium bowl to cover them completely. Soak till softened, about 20 min. Using scissors, remove the hard core from each piece, then cut into bite-size pcs.
  2. Combine the water, granulated sugar, rock sugar and ginger in a 2-qt saucepan over medium heat. Bring to a simmer and cook, stirring, till the sugar is dissolved. Stir in the lime zest, lime juice, and lime leaf. Stir in the snow cloud and mix well. Cold the mix to room temperature, then cover and chill for 1 hour.
  3. To serve, spoon the white fungus and syrup into dessert bowls, sprinkle with the almond slices, and garnish with lime slices.
  4. This recipe yields 4 servings.
