Food Bloggers Against Hunger

Ask yourself this question: What would you do if you were hungry?

When my children were young and I was a single working Mom, I can tell you from my own experience how difficult and depressing it can be to feed your family. Your food budget is never big enough and it can never be stretched far enough. You have to make every dollar you spend on food count. My children and I lived on a very tight food budget allowance. I made a meal plan for 2 weeks and we had to stick to it. I never went grocery shopping without a list of the items we needed, and I bought only the items on that list.

Meals had to be stretched and then re-invented into the next days Dinner. Sweets consisted of Marshmallow Crispy Treats, Boxed Brownies and Peanut Butter cookies~ Packaged cookies or candy bars, bought only if it was, buy one get one free. I always had a pitcher of Kool-aid in the refrigerator, never soda. The Crock-Pot was my best friend. Popcorn was our only junk food. Potato Chips and dip, a luxury. For many people, it is a daily struggle to feed their families. That fact is so very sad but so very true.

My family ate this Spaghetti Dinner at least once a week. The left over spaghetti sauce would be re-invented, for the next nights Dinner into: Garlic Bread Pizza. Left over spaghetti sauce spooned over baked (frozen) garlic bread, and topped with a slice of American cheese.

Family of 4 Spaghetti Dinner~

Ingredients:

Directions:

In a small glass bowl, stir jello into boiling water, continue stirring until completely dissolved. Add cold water and stir until combined.

Place in the refrigerator until set. When jell-o is set, about 4 hours, stir in drained mandarin oranges.

In a medium skillet brown ground turkey until no longer pink. Drain

Stir in spaghetti sauce and Cannellini beans. Heat until bubbly.

While the sauce is heating, in a large pan, bring to a boil 6 cups water. When water reaches a boil, stir in spaghetti noodles. Boil for 5-8 minutes. Drain.

To Serve: Place spaghetti on serving plates, top with meat sauce, sprinkle with Parmesan cheese. Serve with tossed salad and jello.

Another family favorite: Ham and Bean Soup

1 bag (20 oz) 15 Bean Soup Mix (set seasoning packet aside for other use or discard)

2 quarts water

2 T salt

1 lb smoked ham hocks

1-1/2 gallons water

Soaked beans, drained and rinsed

1 cup onion, chopped

1 green pepper, chopped

4 cloves garlic, minced

4 celery ribs, chopped

4-6 carrots, peeled and sliced

1 small rutabaga, peeled and cubed

1 can (14-1/2 oz) diced tomatoes

juice of 2 lemons

2 T chili powder

1-2 T hot sauce

salt and pepper to taste

Ham from ham hocks

Soaking: Place dried beans in a large pot. Cover with 2 quarts water. Add salt, stir. Allow beans to soak overnight, or at least 8 hours

After soaking: Drain water, rinse. Place soaked and rinsed beans in large stock/soup pot. Add ham hocks and water.

Bring bean and ham mixture to a boil, reduce heat and simmer uncovered for 2-1/2 hours.

After simmering, remove ham hocks, cool, remove meat when cool enough to handle.

To soup pot add: onion, green pepper, garlic, celery, carrots, rutabaga, diced tomatoes, lemon juice, chili powder, hot sauce, salt, pepper, and meat from ham.

Return to a boil, reduce heat and simmer for 2 hours.
