%3C/p%3E%3Cp%3E1%20bag%20of%20Blue%20Corn%20Chips%3C/p%3E%3Cp%3Eegg%20whites%20or%20an%20egg%20(I%20used%20egg%20whites%20since%20we%20had%20those%20in%20the%20house)%3C/p%3E%3Cp%3ECrumble%20or%20puree%20in%20the%20food%20processor%20the%20Blue%20Corn%20Chips.%3C/p%3E%3Cp%3EBrush%20egg%20whites%20over%20the%20fish.%20After%20coating%20with%20egg%20whites%20I%20took%20the%20tilapia%20pieces%20one%20at%20a%20time%20and%20placed%20them%20in%20one%20of%20the%20zip%20lock%20bags,%20sealed%20and%20shook%20each%20piece%20until%20coated.%3C/p%3E%3Cp%3EI%20placed%20each%20encrusted%20piece%20of%20Tilapia%20on%20a%20heavy%20duty%20foil%20line%20jelly%20roll%20pan,%20coated%20with%20non-stick%20spray.%20Then%20sprayed%20the%20top%20of%20each%20piece%20of%20encrusted%20fish%20with%20the%20non-stick%20spray.%20This%20helps%20for%20moisture%20and%20to%20brown%20the%20coating.%3C/p%3E%3Cp%3EI%20then%20placed%20the%20pan%20in%20a%20350%20oven%20for%20approximately%208-10%20minutes.%20When%20I%20prepared%20this%20dish%20previously%20I%20only%20had%20one%20oven%20to%20work%20with%20that%20was%20already%20in%20use%20so%20I%20decided%20to%20put%20these%20on%20the%20grill%20outside%20to%20cook%20but%20sealed%20the%20heavy%20duty%20foil%20around%20the%20fish.%20This%20method%20took%20about%206-8%20minutes%20on%20medium%20heat.%20All%20turning%20out%20perfectly%20cooked%20and%20moist.%3C/p%3E%3Cp%3EPrior%20to%20preparing%20the%20encrusted%20fish%20I%20made%20the%20Raspberry%20Chipotle%20sauce.%20This%20makes%20about%202%20cups%20and%20is%20so%20tasty.%20It%20has%20a%20bit%20of%20a%20kick%20to%20it%20but%20if%20spice%20isn't%20a%20problem%20then%20go%20with%20the%20recipe%20I%20have%20posted%20below.%20Otherwise%20you%20may%20want%20to%20use%20a%20little%20less%20of%20the%20Chipotle%20Peppers%20in%20Adobo%20Sauce.%3C/p%3E%3Cp%3EHeat%20all%20ingredients%20in%20a%20saucepan%20for%20approximately%2015%20minutes.%20Cool%20for%20a%20few%20minutes%20and%20place%20in%20a%20food%20processor%20or%20blender%20to%20puree%20or%20rough%20chop%20(whichever%20consistency%20you%20prefer)%3C/p%3E%3Cp%3ETo%20Serve:%3C/p%3E%3Cp%3EPlace%20Blue%20Corn%20Encrusted%20Tilapia%20on%20a%20plate%20and%20drizzle%20the%20Raspberry%20Chipotle%20Sauce%20over%20the%20top.%3C/p%3E){kind=link}
